Menu Plan Monday 5.30-6.5

There are lots of fish recipes on the menu this week! We’re still digging into the big 10 lb box of fish that we bought last week.

We still have some locally-grown asparagus leftover as well. We’re hoping to try out our backyard fire pit (it’ll probably be in the rain!) to roast hot dogs and apples.

I still have plenty of gorgeous organic Fuji apples left from canning applesauce this past week, so I’ll probably use some to take a dessert for dinner with friends.  Please share your favorite apple recipes! 


To Do: Soak Waffle Batter, Thaw Hot Dogs


  • Breakfast: GF Buttermilk Waffles, Homemade Yogurt, Fruit
  • Lunch: Peanut Butter Sandwiches, Carrot Sticks
  • Dinner: Roast Hot Dogs (nitrite-free), Roast Apples, Potato Salad
To Do: Soak Lentils & Brown Rice


  • Breakfast: Cheese Omelets, Toast
  • Lunch: Salmon Cake Sandwiches with Homemade Tartar Sauce (recipe coming soon!), Oranges
  • Dinner: Lentil & Brown Rice Casserole, Creamy Cucumber Salad

To Do: Thaw Fish, Soak Buckwheat


  • Breakfast: Soaked Porridge, Eggs
  • Lunch: Cheese Sandwiches & Homemade Veggie Soup, Apples
  • Dinner: Baked Cod with Ginger-Orange Sauce, Buckwheat, Asparagus


  • Breakfast: Baked Apple Pancake, Homemade Yogurt
  • Lunch: Peanut Butter Sandwiches, Carrot Sticks
  • Dinner: Veggie Quiche with GF Crust, Oranges

To Do: Thaw Tomatoes, Soak Black Beans, Soak Porridge


  • Breakfast: Soaked Porridge, Eggs
  • Lunch: Salsa Black Bean Soup, Toasted Cheese Sandwiches, Oranges
  • Dinner: At friends’ house; prepare dessert (something with apples…)

To Do: Soak Millet, Soak Brown Rice


  • Breakfast: Millet & Homemade Applesauce, Homemade Yogurt
  • Lunch: Egg Salad Sandwiches, Oranges
  • Dinner: Salmon &Veggie Spring Rolls with Peanut Sauce, Brown Rice
