Menu Plan Monday 5.9-5.15

I’m working on putting in my monthly co-op order for groceries this week, so we’re getting to the “bottom” of things in our pantry/freezer. I picked up a few local produce items during a trip to town the other day, and I’ll be combining those with some of my pantry staples (lots of beans & rice!).

What do you make when it’s right before grocery day? Do you have some “pantry staple” favorites?


Sunday
Breakfast: Soaked Porridge, Eggs
Lunch: Church Potluck- GF Spinach Quiche
Dinner: Homemade Pizza, Rhubarb Sauce

To Do: Soak Split Peas, Soak Millet

Monday
Breakfast: Breakfast Millet, Yogurt, Nuts/Dried Fruit
Lunch: Cheese Sandwiches, Fruit (whatever is getting old in the fruit basket) :)
Dinner: Split Pea Soup, Bread, Apple Slices

To Do: Bake GF Bread, Soak Buckwheat, Thaw Chicken

Tuesday
Breakfast: Cheesy Eggs, Toast
Lunch: Veggie Cream Cheese Spread Sandwiches, Apple Slices
Dinner: Crockpot Lemon Dill Chicken, Buckwheat, Asparagus

To Do: Soak Black Beans (make extra for Fri.), Soak Brown Rice, Boil Eggs

Wednesday
Breakfast: Soaked Porridge, Peanut Butter
Lunch: Egg Salad Sandwiches, Apple Slices
Dinner: Black Bean Burgers with Avocado Mayo, Brown Rice (instead of buns), Carrot Sticks

To Do: Thaw Chicken Stock

Thursday
Breakfast: GF Ginger-Molasses Muffins, Fruit Smoothies
Lunch: Salmon Salad Sandwiches, Apple Slices
Dinner: Lentil Soup; use dried apricots instead of plums (make extra for neighbor recovering from surgery), Bread, Rhubarb Sauce

To Do: Soak Waffle Batter, Soak Brown Rice

Friday
Breakfast: GF Buttermilk Waffles, Peanut Butter
Lunch: Egg Salad Sandwiches, Apple Slices
Dinner: Cheese & Brown Rice Casserole, Steamed Green Beans, Black Bean Brownies

To Do: Soak Garbanzo Beans

Saturday
Breakfast: Apple Oven Pancake, Eggs
Lunch: Hummus, Homemade Tortillas, Carrot/Celery Sticks
Dinner: Salmon & Cream Cheese Basil Sauce, Spaghetti Squash (cook extra squash for Sun.)

To Do: Thaw Sausage
