Menu Plan Monday 6.13-6.19

Some dear neighbors blessed us with some eggs and bear meat  this week. What fun!

Also, our co-op order is arriving this week, to restock our pantry staples.

We’re starting to see some more growth on the seedlings in our garden, although we’ve had so much rain, it’s been slow. Little baby herbs, lettuce, tomatoes, peppers, corn, peas, and beans are sprouting! We do have an abundance of chives, so I’ll be adding those to salads this week.

Sunday

  • Breakfast: Soaked Porridge, Peanut Butter, Fresh Carrot-Fruit Juice (with juicer)
  • Lunch: Church Potluck: Take carrot sticks, Crockpot Apple Cake (make GF)
  • Dinner: Bean & Veggie Soup (with homemade stock), Popcorn
  • To Do: Soak Waffle Batter, Soak Millet

    Monday

  • Breakfast: GF Buttermilk Waffles, Eggs
  • Lunch: Cheese Sandwiches, Oranges
  • Dinner: Bear Meat Stroganoff, Millet, Carrot Sticks
  • To Do: Bake GF Bread, Start Sprouting Seeds

    Tuesday

    • Breakfast: Strawberry Oven Pancake, Yogurt
    • Lunch: Fish Sandwiches, Fruit
    • Dinner: Spaghetti Squash “Noodles” with Cottage Cheese & Herbs, Green Beans, Peanut Butter Brownies

    To Do: Make Sourdough Bread, Soak Porridge, Soak Lentils

    Wednesday

  • Breakfast: Soaked Porridge, Eggs
  • Lunch: Cheese Sandwiches, Fruit
  • Dinner: Lentil Stew with Oranges, Carrot-Celery Slaw with Yogurt Dressing
  • To Do: Thaw Hot Dogs

    Thursday

  • Breakfast: Cream Cheese & Herb Omelets, Toast
  • Lunch: Peanut Butter Sandwiches, Fruit
  • Dinner: Campfire-Roasted Hot Dogs (nitrate-free), Carrot-Cabbage-Apple Slaw with Cumin-Lime Dressing
  • To Do: Thaw Soup, Soak Brown Rice

    Friday

  • Breakfast: Brown Rice with Nuts & Dried Fruit (make extra for snacks), Eggs
  • Lunch: Split Pea Soup (from freezer), Cheese Toast
  • Dinner: Greek Pizza, Melon
  • To Do: Make Yogurt, Soak White Beans

    Saturday

  • Breakfast: Scrambled Eggs with Veggies & Feta, Toast
  • Lunch: Smashed White Bean & Avocado Club Sandwiches, Melon
  • Dinner: (“Breakfast for Dinner”) GF Pancakes, Homemade Breakfast Sausage, Berries

    • Those little chives are champions, aren’t they? It is so wonderful to hear other folks get so excited about their gardens! At casa Z, we are nibbling kale, herbs, and peas like we were bunnies. My little dude is my garden’s most threatening natural predator…as it should be. Love your menu!

      Can you tell me what flour combinations you used to make the crockpot apple cake. I want to try this but am new to being gluten free and I am not sure how to substitute.

      @Colleen, Hi, Colleen,
      I just kind of “winged it;” we were in a hurry to get to church. (I put everything in the crockpot, and then plugged it in at the church kitchen before worship. It was ready in time for the potluck.) So, hopefully this is what I used:
      3/4 cup Brown Rice Flour
      1/4 cup Tapioca Flour or Potato Starch (I don’t remember!)
      I added a slight dash of coconut milk (any milk would work), as mine seemed a bit dry…
      I didn’t use brown sugar, and used 1/2 cup Sucanat instead.
      I think I only used 2 huge apples, instead of 3.

      I have all the ingredients for the crockpot apple cake, and it’s on the menu for tomorrow, but a few more questions: did you put it in a greased dish and put that into the crockpot stoneware or directly pour the batter into the greased stoneware? Did it stick? What oil/grease did you use? Thanks for your help!

      @~M, I just poured the batter right into the crockpot. I didn’t grease it first, but maybe I should have. :) I usually grease pans with coconut oil.
