Menu Plan Monday 6.6-6.12


Summer is entering in slowly here. We’ve had a lot of cool rainy days, but I am transitioning to some summery salad meals this week.

What are your favorite frugal summer meals? Please share!

Sunday

  • Breakfast: Soaked Porridge, Eggs
  • Lunch: Visit Family; take fruit tray
  • Dinner: Millet & Cheese Casserole, Carrot Sticks
  • Monday

  • Breakfast: Cheese Omelets, Toast
  • Lunch: Peanut Butter Sandwiches, Apples
  • Dinner: Roast Chicken, Buckwheat, Asparagus
  • To Do: Make Yogurt, Soak Beans, Soak Rice

    Tuesday

  • Breakfast: Homemade Yogurt & GF Muesli (dried nuts/seeds/fruit), Eggs
  • Lunch: Hot Fish Sandwiches with Homemade Tartar Sauce, Oranges
  • Dinner: Bean & Mango Salad, Brown Rice with Cheese
  • To Do: Make Chicken Stock, Soak Porridge

    Wednesday

  • Breakfast: Soaked Porridge, Eggs
  • Lunch: Peanut Butter Sandwiches, Carrot Sticks
  • Dinner: Homemade GF Pizza with Creamy Herb Sauce & Veggies, Fruit Salad
  • To Do: Soak Beans, Soak Rice, Make Banana Bread

    Thursday

  • Breakfast: Orange Smoothies, Banana Bread
  • Lunch: Grilled Cheese Sandwiches, Apples
  • Dinner: Chicken Spring Rolls, Asian Garbanzo Bean Salad, Brown Rice
  • Friday

  • Breakfast: Baked Apple Pancake, Cheesy Eggs
  • Lunch: Peanut Butter Sandwiches, Oranges
  • Dinner: Lemon & Herb Fish, Bread & Butter, Asparagus
  • To Do: Soak Millet

    Saturday

  • Breakfast: Carrot-Apple Salad, Homemade Yogurt, Toast
  • Lunch: Egg Salad Sandwiches, Oranges
  • Dinner: Summer Chicken Salad with Apple Vinaigrette, Millet
  • To Do: Prep for Potluck

    • Wow! I’m really impressed. Breakfast, lunch and dinner planned! I’m just counting on leftovers! I did make granola this weekend though and we have oatmeal in the crockpot tonight so breakfast should be covered. I’m excited about this blog! Following you!

      I love having leftovers, too. I usually include them as extra “sides” when I pack my husband’s lunches (or mix them into another meal). Many of the planned meals include meats/broths that were leftover from another meal. (For example, all the chicken dishes are from one chicken that I cook on Monday.)

      Yum- granola & oatmeal. Two of my favorite breakfasts! :) Putting oatmeal in the crockpot was a wonderful tip I learned from a friend during my early postpartum days. It’s so handy & delicious! :)

      Michele, I love what you do with your meal planning. My meal planning isn’t quite so extensive but I do meal plan too. I have to admit, it is exhasting to look at all of the homemade things that you are preparing for your family. I would love to do the same but don’t know if I have the energy! You’re doing a great job, you’re husband must be proud.

      Let me know if there are any meal items/tips you’d like for me to elaborate on, to let you know how I get them done.

      I try to mainly cook at the beginning of the week, and use leftovers for other meals throughout the week. I do make sure to bake our gluten-free breads (there aren’t any available to purchase in our small town, anyway.)

      It’s definitely a routine I’ve developed gradually, not something that has become exhausting. Take it in “baby steps”! :)
