Menu Plan Monday 7.11-7.17

It’ll be a busy week for us with a couple road trips planned, so I’m keeping things easy and “travel-ready.” I’m also placing our co-op order this week, so the cupboards are starting to look a bit bare. Our grass-fed beef order for the year arrived this week (hooray!), so that is stocked in the freezer.

What are your favorite quick travel-safe foods?


To Do: Soak Beans


  • Breakfast:  Smoothies (use homemade yogurt), Toast
  • Lunch: Bean Taco Salad, Bread
  • Dinner: Salmon & Millet Casserole, Green Beans

To Do: Thaw Tomatoes, Soak Beans


  • Breakfast: Cream Cheese Omelets, Toast
  • Lunch: Peanut Butter Sandwiches, Carrot Sticks
  • Dinner: Salsa Black Bean Soup, Watermelon

To Do: Soak Pancake Batter, Soak Rice


To Do: Boil Eggs, Bake Bread



  • Breakfast: Eggs, Toast
  • Lunch: Peanut Butter Sandwiches, Watermelon
  • Dinner: Burgers, Green Salad


  • Breakfast: GF Porridge with Peanut Butter
  • Lunch: Cheese Sandwiches, Carrot Sticks
  • Dinner: GF Pancakes, Eggs (breakfast for dinner!)
