Menu Plan Monday 7.4-7.10

I’m making use of some “odds & ends” ingredient leftovers in the refrigerator before I place our co-op order next week. I’m keeping things flexible, as our plans for the week aren’t certain yet; there may be some summer trips/outings in there!


  • Breakfast: Soaked Porridge, Peanut Butter
  • Lunch: Popcorn, Cheese, Watermelon
  • Dinner: Quiche Lorraine (bacon instead of ham) with GF Crust, Green Salad

To Do: Soak Chickpeas, Soak Brown Rice, Soak Pancake Batter



  • Breakfast: Teff Porridge, Eggs
  • Lunch: Peanut Butter Sandwiches, Watermelon
  • Dinner: Pizza Burgers, Green Salad

To Do: Bake GF Bread, Soak Brown Rice, Soak Lentils


  • Breakfast: Breakfast Rice (with crispy nuts/dried fruit)
  • Lunch: Cheese Sandwiches, Watermelon
  • Dinner: Honey Baked Lentils (from More With Less),  Carrot Sticks


  • Breakfast: Cream Cheese Omelets, Toast
  • Lunch: Peanut Butter Sandwiches, Watermelon
  • Dinner: Spaghetti Pie, Green Salad


  • Breakfast: GF Blueberry Muffins, Eggs
  • Lunch: Hot Fish Sandwiches, Celery/Carrot Sticks
  • Dinner: Vegetable Oven Pancake (from Simply in Season), Cottage Cheese, Watermelon

To Do: Soak Beans, Co-op Order Due


  • Breakfast: Eggs, Toast
  • Lunch: Peanut Butter Sandwiches, Watermelon
  • Dinner: Bean Chili, Grated Cheese, Bread, Carrot Sticks

To Do: Soak Porridge
