Menu Plan Monday 8.1-8.7

It’ll be a busy week for us, with family visiting, an out-of-town trip to the chiropractor, and teaching VBS every night! I planned some quick & easy meals (mostly finger-foods) that we can eat on the run and/or prepared ahead of time with minimal dishes to do afterward!

We had a birthday party for Calvin on Saturday, so we’ve been enjoying the leftovers to munch on for quick finger-foods while entertaining guests.

Sunday
Breakfast: Porridge, Eggs, Rhubarb Sauce
Lunch: Finger Food Leftovers (from birthday party), Popcorn
Dinner: Out to eat with Family (Mexican food & Milkshakes!)

Monday
Breakfast: GF Pancakes, Homemade Breakfast Sausage
Lunch: Shrimp Salad, Bread, Creamy Iced Jasmine Green Tea
Dinner: Lemon Garlic Chicken, Millet, Watermelon, Homemade Ice Cream

To Do: Bake GF Bread

Tuesday
Breakfast: Eggs, Toast
Lunch: Peanut Butter Sandwiches, Watermelon
Dinner: Chicken Salad with Greens, Bread

To Do: Soak Beans, Soak Brown Rice, Soak Millet

Wednesday
Breakfast: Millet with Rhubarb & Cinnamon, Milk
Lunch: Brown Rice & Cheese, Green Salad
Dinner: Hummus, Tortilla Chips, Veggie Sticks

To Do: Thaw Beans, Make Chicken Stock

Thursday
Breakfast: Cream Cheese Omelets, Toast
Lunch: Peanut Butter Sandwiches, Veggie Sticks
Dinner: Taco Salad, Watermelon

To Do: Soak Porridge, Thaw Hot Dogs, Soak Almonds & Seeds

Friday
Breakfast: Porridge, Eggs
Lunch: Cheese Sandwiches, Watermelon
Dinner: Hot Dogs (nitrate-free),  Veggie Sticks

To Do: Roast Almonds & Seeds

Saturday
Breakfast: Grain-Free Granola, Homemade Yogurt
Lunch: Peanut Butter Sandwiches, Watermelon
Dinner: Spicy Garlic Shrimp with Coconut Rice

To Do: Soak Porridge, Soak Lentils, Soak Brown Rice

Sunday
Breakfast: Porridge with Peanut Butter
Lunch: Popcorn, Cheese, Watermelon
Dinner: Simple Lentil Salad with Feta, Brown Rice
