Menu Plan Monday 8.23-8.29

I have some simple meals planned for a busy week ahead. But Calvin said we had “been in a rut” with our meals, so I spent Sunday evening browsing new recipe ideas! I’ve incorporated some fresh garden produce, as well as making use of the crockpot.

Breakfast: Nectarine Crumble, Eggs
Lunch: Peanut Butter Sandwiches, Carrot Sticks
Dinner: Baked Potatoes with Beans & Cheese, Green Salad

To Do: Thaw Bananas, Soak Beans

Zucchini Passion Cake (from The Baker’s Bible), Eggs
Lunch: Cheese & Tomato Sandwiches, Nectarines
Italian Millet & Bean Salad (use millet instead of pasta), Green Salad

To Do: Thaw Ribs, Soak Garbanzo Beans

Breakfast: Peanut Butter Brown Rice Pudding
Lunch: Hummus, Homemade Tortillas (make extra for Friday), Carrot Sticks
Dinner: Baked Spaghetti Squash & Cheese, Rhubarb Sauce

To Do: Soak Porridge

Breakfast: Teff Porridge, Eggs
Lunch: Peanut Butter Sandwiches, Carrot Sticks
Dinner: Crockpot BBQ Beef Short RibsAu Gratin Potatoes, Nectarines

To Do: Soak Nuts/Seeds, Soak Garbanzo Beans

Breakfast: Breakfast Tacos, Nectarines
Lunch: Vegetarian Chickpea “Mock” Tuna Salad on Garden Lettuce, Bread
Dinner: Beef & Veggie Stew (with leftovers), Bread

Breakfast: Fruit & Cream Cheese Pizza
Lunch: Egg Salad Sandwiches, Nectarines
Dinner: Baked Stuffed Zucchini, Coconut Muffins

To Do: Soak Porridge

Breakfast: Soaked Porridge with Peanut Butter
Lunch: Church BBQ
Dinner: GF Waffles, Eggs

  • The peanut butter rice pudding sounds fantastic – we love rice pudding for breakfast so I’m definitely going to try it!

    I’m curious about the rhubarb sauce. I have a ton of rhubarb in the freezer and I’m always looking for new ways to use it :)

    Out of this list I am especially intrigued by the Peanut Butter Brown Rice Pudding, Zucchini Passion Cake, and the Crock Pot Recipe. I love my slow cooker and, in fact, I was trying to think if I could do the Rice Pudding in the slow cooker :)
