Menu Plan Monday 9.13-9.19

We’re heading into fall with some “autumn-themed” dishes this week. I love fall! It’s my favorite season.

Monday
Breakfast: Ginger Spice Muffins, Eggs
Lunch: Grilled Cheese Sandwiches, Watermelon
Dinner: Salmon with Homemade Pesto, Sauteed Carrots

To Do: Thaw Sausage

Tuesday
Breakfast: Cheese Omelets, Toast
Lunch: Salmon Salad Sandwiches (use leftovers), Fruit
Dinner: Sausage & Apple-Stuffed Squash, Green Salad

To Do: Soak Rice

Wednesday
Breakfast: Baked Oatmeal (from Simply in Season), Homemade Sausage Patties
Lunch: Peanut Butter Sandwiches, Fruit
Dinner: Crockpot Chicken Sweet Potato Curry, Brown Rice, Green Beans

To Do: Soak Pancake Batter, Pick Blackberries

Thursday
Breakfast: Blackberry GF Pancakes, Eggs
Lunch: Millet & Cheese Casserole, Fruit
Dinner: Veggie Stir-Fry with Peanut Sauce, Brown Rice

To Do: Soak Garbanzo Beans

Friday
Breakfast: GF Cinnamon Rolls, Eggs
Lunch: Homemade Hummus, Homemade Tortillas, Carrot/Celery Sticks
Dinner: Zucchini “Noodles” with Homemade Marinara Sauce, Green Salad

To Do: Soak Beans

Saturday
Breakfast: Breakfast Burritos
Lunch: Chicken Curry Sandwiches (use leftovers), Fruit
Dinner: Bean Taco Salad, Mexican Rice

To Do: Soak Porridge

Sunday
Breakfast: Peanut Butter Buckwheat Porridge
Lunch: Popcorn, Cheese, Apples
Dinner: Roast Chicken, Mashed Cauliflower, Green Beans
