Lunch: Egg Salad Sandwiches, Pears
Dinner: White Bean Casserole, GF Peach Muffins, Green Salad

To Do: Soak Black Beans (make extra for Friday)

Tuesday
Breakfast: Apple Cobbler, Eggs
Lunch: Grilled Cheese Sandwiches, Vegetable Soup
Dinner: Chicken, Black Bean, & Corn “Taco” Salad, Homemade Tortilla Chips, Pears

Wednesday
Breakfast: Sunny Peach Millet (from Vegetarian Mother’s Cookbook), Homemade Yogurt
Lunch: Peanut Butter Sandwiches, Carrot/Celery Sticks
Dinner: Veggie Quiche, Baked Apples

To Do: Boil Eggs, Thaw Beef

Thursday
Breakfast: Apple Oven Pancake, Homemade Yogurt
Lunch: Chef Salad, Homemade Bread
Dinner: Beef  & Veggie Stir Fry, Brown Rice

Friday
Breakfast: Cheese Omelets, Toast
Lunch: Peanut Butter Sandwiches, Apples
Dinner: Black Bean Burgers with GF Rolls, Green Salad

Saturday
Breakfast: Carrot-Zucchini Muffins, Eggs
Lunch: Brown Rice with Cheese, Apples
Dinner: Fish with Peach Salsa, Roasted Potatoes, Green Beans

To Do: Soak Porridge, Soak Lentils

Sunday
Breakfast: Soaked Porridge with Apples & Nuts/Seeds
Lunch: Popcorn, Cheese, Carrot/Celery Sticks
Dinner: Honey Baked Lentils (from More With Less), Roasted Sweet Potatoes, Green Salad
