Menu Plan Monday (Meal Prep Edition)

Our family will be heading to The Relevant Conference this week, which is why I just have a “short week” of meals planned. So, I thought I’d also share with you some “Meal Prep” resources I’ve recently come across, and I think you’ll love!

Breakfast: Carrot-Zucchini Muffins, Homemade Yogurt
Lunch: Popcorn, Cheese, Apple Slices
Dinner: Stroganoff, Brown Rice, Peppers

To Do: Soak Beans

Breakfast: Veggie & Feta Omelets, leftover Muffins
Lunch: Peanut Butter Sandwiches, Carrots (from garden)
Dinner: Chili with Grated Cheese, Home-canned Pears

To Do: Soak Beans, Bake GF Bread

Breakfast: Millet & Apples, Homemade Yogurt
Lunch: Meatball Sandwiches, Pears
Dinner: Vegetarian Curry, Brown Rice

To Do: Make “reverse powerbars/larabars” (from Healthy Snacks to Go)
