Menu Plan Monday 11.29-12.5

I’m working some Thanksgiving leftovers into the menu this week, as well as looking forward to Gen’s 4th birthday on Saturday! (Wow.. where did my baby go?) More snow is on the forecast, so I have some warm soups planned!

Monday
Breakfast:
Pumpkin Waffles, Yogurt
Lunch: Peanut Butter Sandwiches, Apples
Dinner: Greek Frittata, Oranges

To Do: Bake Bread

Tuesday
Breakfast:
Apple Omelets, Toast
Lunch: Cheese Sandwiches, Carrot/Celery Sticks
Dinner: Turkey (leftover) with Sweet & Sour Sauce, Brown Rice, Green Salad

Wednesday
Breakfast:
Apple-Spice Millet, Yogurt
Lunch: Egg Salad Sandwiches, Carrot/Celery Sticks
Dinner: Spaghetti Pie (use squash), Green Salad

To Do: Soak Lentils/Rice for soup

Thursday
Breakfast: Apple Muffins, Eggs
Lunch: Peanut Butter Sandwiches, Carrot/Celery Sticks
Dinner: Ginger Chicken Lentil Rice Soup (use turkey), Oranges

Friday
Breakfast: Apple-Sweet Potato-Pumpkin Muffins, Eggs
Lunch: Turkey Salad, Veggies
Dinner: Baked Potatoes with Black Beans, Oranges

Saturday
Breakfast: GF Pancakes, Eggs
Lunch: Grilled Cheese Sandwiches
Dinner: Birthday Dinner for Gen (her choice), Chocolate Cake

Sunday
Breakfast:
Soaked Oatmeal, Eggs
Lunch: Popcorn, Cheesy Apple Rings
Dinner: Soup (in slow cooker), Bread
