Menu Plan Monday 11.8-14

It was a challenge to narrow down the list of apple recipes I wanted to try out this month. So, I put them all in! We’ll see if my apple supply lasts; I may need to revise the menu, but I’m hoping to sample all these fun new recipes. What is your favorite fall apple recipe?

Monday
Breakfast: Baked Oatmeal (from Simply in Season), Eggs
Lunch: Cheese Sandwiches, Green Salad
Dinner: Ginger Chicken Rice & Lentil Soup, Baked Apples

Tuesday
Breakfast: Healthy Apple Squares, Eggs
Lunch: Taco Salad, Homemade Tortilla Chips
Dinner: Chicken Apple Stew, Bread

To Do: Make Yogurt, Soak Pancake Batter

Wednesday
Breakfast: GF Pancakes with “Crustless Apple Pie” Topping, Homemade Yogurt
Lunch: Egg Salad Sandwiches, Veggie Sticks
Dinner: Crockpot Autumn Sausage, Green Salad, Cinnamon Muffins

Thursday
Breakfast: Mini Apple Pies (I love Laura’s recipes!), Eggs
Lunch: Mini Pizzas, Veggies
Dinner: Crockpot Chicken with Apples & Onions, Green Salad, Millet

Friday
Breakfast: German Pancake with Apple Salad, Homemade Yogurt
Lunch: Peanut Butter Sandwiches, Veggies
Dinner: Split Pea Soup, Bread

To Do: Soak Chickpeas (plus extra for Sunday)

Saturday
Breakfast: Carrot-Apple Salad, Homemade Yogurt
Lunch: Hummus, Tortillas, Veggie Sticks
Dinner: Stroganoff, Brown Rice, Green Beans

To Do: Soak Porridge, Soak Chickpeas

Sunday
Breakfast: Soaked Oatmeal Porridge, Eggs
Lunch: Church Potluck- Take GF Apple Pie & Baked Squash
Dinner: Crockpot Chickpea Curry, Millet
