Menu Plan Monday 12.13-12.19

I’m looking forward to the arrival of our co-op this week, as I am planning on some Christmas preparations, as well as hosting two Christmas Spice Teas this weekend! It’ll be a busy week, along with some errands out of town, so I’m using leftovers (or the “cook once, eat twice” concept) and the slow cooker to simplify dinners.

Breakfast: Breakfast Millet, Eggs
Lunch: Peanut Butter Sandwiches, Apples
Dinner: Salmon & Veggie Shepherd’s Pie

To Do: Start Sprouting Lentils, Soak Beans (make extra for Friday), Soak Rice, Soak Waffle Batter

Breakfast: GF Waffles, Yogurt
Lunch: Cheese Sandwiches, Oranges
Dinner: Black Beans & Brown Rice, Green Salad

To Do: Thaw Venison, Make Lacto-fermented Cranberry-Orange Relish (from GNOWFGLINS)

Breakfast: Cheese Omelets, Basic Soaked Muffins
Lunch: Salmon Salad Sandwiches, Apples
Dinner: Venison Roast with Onion Gravy, Root Vegetables

To Do: Start Tea Party Prep

Breakfast: Eggs, leftover Muffins
Lunch: Peanut Butter Sandwiches, Oranges
Dinner: Slow-Cooker Venison (use leftover from roast) & Sprouted Lentil Stew

To Do: Soak Pancake Batter, bake for Tea Party

Breakfast: GF Pancakes, Lacto-fermented Cranberry-Orange Relish (from GNOWFGLINS)
Lunch: Cheese Sandwiches, leftover Stew
Dinner: Baked Potatoes with Black Beans (leftover), Green Salad

To Do: Prep for 2nd Tea Party

Breakfast: Scrambled Eggs, Toast
Lunch: Ants on a Log, leftovers, Pears
Dinner: Creamy Turkey Soup, Bread

To Do: Soak Porridge, Soak Rice

Breakfast: Soaked Porridge (Nourishing Traditions), Eggs
Lunch: Popcorn, Apples with Peanut Butter
Dinner: Brown Rice & Cheese, Carrots
