Menu Plan Monday 12.20-12.26

It’s Christmas week! We’re looking forward to a restful, worshipful week of celebrating. (My birthday is also this week, too.) I have some sewing projects to finish up, so I’m keeping the kitchen-prep tasks to a minimum, with plenty of “one pot” meals. Merry Christmas, friends!

Monday
Breakfast: Apple Oven Pancake, Eggs
Lunch: Peanut Butter Sandwiches, Oranges
Dinner: Turkey Rice & Veggie Casserole, Sauteed Ginger Carrots

To Do: Bake Bread, Soak Porridge, Soak Black Beans

Tuesday
Breakfast: Soaked Multi-Grain Porridge, Eggs
Lunch: Cheese Sandwiches, Apples
Dinner: Black Bean-Stuffed Sweet Potatoes, Yogurt, Green Salad

To Do: Thaw Meat, Soak Rice, Soak Waffle Batter, Bake Cake

Wednesday
Breakfast: GF Waffles, Homemade Breakfast Sausage
Lunch: Egg Salad Sandwiches, Oranges
Dinner: Cheesy-Rice Casserole, Green Salad, Birthday Cake

To Do: Soak Millet

Thursday
Breakfast: Omelets, Toast
Lunch: Peanut Butter Sandwiches, Oranges
Dinner: Sausage, Apple, Sweet Potato Bake, Bread

To Do: Soak Porridge, Thaw Broth, Thaw Chicken

Friday
Breakfast: Soaked Multi-Grain Porridge, Eggs
Lunch: Grilled Cheese & Apple Sandwiches
Dinner: White Bean & Veggie Soup, Bread

Saturday- Christmas
Breakfast: GF Cinnamon Buns, Cheesy Scrambled Eggs, Oranges
Lunch: Finger Foods (deviled eggs, veggies & dip, etc.)
Dinner: Roast Chicken, Garlic Mashed Potatoes, Homemade Cranberry Sauce, Green Beans

To Do: Soak Brown Rice

Sunday
Breakfast: Cheese Omelets
Lunch: Peanut Butter Popcorn, Apples
Dinner: Chicken & Veggie Stir-Fry, Brown Rice
