Pumpkin Seeds are full of zinc- an essential part of a nourished diet (and for fertility, as well!). These are a delightful crunchy, savory snack when you get “the munchies,” and a nice change from all the sweets of the holiday season.
I often substitute in squash seeds (such as from acorn squash), if that is what I have on hand. (Hey, they’re basically free!) But I don’t know how their zinc content compares to pumpkin (whether it is the same amount or different- anyone know?).
I use Coconut Aminos instead of the typical tamari. It is a delicious, gluten-free, soy-free, fermented version of “soy sauce.” (It doesn’t have the MSG that other liquid aminos might have.)
Savory Pumpkin Seed Snack Mix
1 cup fresh Pumpkin Seeds
1 Tbl. Butter or Coconut Oil, melted
4-6 Tbl. Coconut Aminos or Tamari
1-2 tsp. Garlic Powder
2 tsp. dried Parsley
Sprinkle of Sea Salt, Ground Pepper, and/or Cayenne, if desiredSoak the fresh pumpkin seeds for a couple hours after removing from the pumpkin, and then strain through a mesh colander to remove much of the stringy pulp. Grease a flat baking sheet or jelly roll pan with the oil/butter, and then spread the seeds over the pan. Sprinkle the seeds with your desired amount of tamari, garlic, parsley, and seasonings.
Bake at 400 degrees F for 10-20 minutes until toasted. Remove from oven, and let cool before eating.
Variation: Add in other soaked nuts/seeds to the mix, and increase seasonings accordingly.

On my food tracking program it lists pumpkin seeds as having the same amount of nutrients as squash seeds. The zinc content for one cup of whole roasted seeds is 7mg or 82% of rda.
Isn’t it amazing that these are available durring cold/flu season and zinc helps us to recover from both of these aillments? What a beautiful design!
