Menu Plan Monday 1.17-1.23

I’m looking forward to the arrival of our co-op order this week, to restock our pantry staples. We are also preparing for this month’s tea events, so I’ll be doing plenty of baking! With more wintery rainy days ahead, I’m planning hot soups, frugally stretching a chicken for several meals, and some homemade bread.

Breakfast: Homemade Breakfast Sausage, GF Pancakes
Lunch: Hummus, Homemade Tortillas, Oranges
Dinner: Roast Chicken, Green Salad, Biscuits

Breakfast: Apple Omelets, Toast
Lunch: Peanut Butter Sandwiches, Carrot Sticks
Dinner: Impossible Cheeseburger Pie, Green Beans

To Do: Bake Bread (from Healthy Bread in Five Minutes a Day), Soak Rice, Make Chicken Stock

Breakfast: GF Waffles, Eggs
Lunch: Grilled Cheese Sandwiches, Tomato Soup
Dinner: Salmon Cakes, Sauteed Ginger Carrots, Brown Rice

To Do: Soak Beans, Make Mayonnaise, Soak Nuts/Seeds

Breakfast: Hot Genius Cereal, Peanut Butter
Lunch: Chicken Salad Sandwiches, Oranges
Dinner: Chili, Cornbread (grind corn), Apples

To Do: Begin Baking, Thaw Zucchini

Breakfast: Carrot-Zucchini Muffins, Eggs
Lunch: Cheese Sandwiches, Apples
Dinner: Chicken Tortilla Soup, Tortilla Chips, Carrot Sticks

To Do: Baking

Breakfast: Grain-Free Muesli, Homemade Yogurt
Lunch: Hard-Boiled Eggs, Bread, Apples
Dinner: Crockpot BBQ Beef Short Ribs, Au Gratin Potatoes, Green Beans

Breakfast: Cheese Omelets, leftover Muffins
Lunch: Peanut Butter Popcorn, Apples
Dinner: Shepherd’s Pie (with leftovers)
