Menu Plan Monday 2.14-2.27


After last week’s busyness, I’m looking forward to getting back to restocking our kitchen with some of the basics- homemade bread, yogurt, and some grocery shopping. The weather forecast looks like a chilly one, so I have some favorite hot meals planned. (My Beloved has been working hard outside on projects in the cold wind & rain!)

Monday
Breakfast: Cheese Omelets, Toast
Lunch: Ham Sandwiches, Apples
Dinner: Salisbury Steak, Roasted Potatoes, Cabbage Salad

To Do: Soak Beans, Soak Rice, Make Yogurt

Tuesday
Breakfast: GF Waffles, Homemade Yogurt, Berries
Lunch: Egg Salad Sandwiches, Oranges
Dinner: Bean Taco Salad, Spanish Rice

To Do: Soak Porridge

Wednesday
Breakfast: Soaked Porridge (from Nourishing Traditions), Eggs
Lunch: Peanut Butter Sandwiches, Apples
Dinner: Sausage & Pepper Sandwiches on Homemade Rolls, Raw Veggies

To Do: Soak Millet

Thursday
Breakfast: Apple Oven Pancake (from Simply in Season), Homemade Yogurt
Lunch: Grilled Cheese Sandwiches, Oranges
Dinner: Salmon Cakes, Millet, Broccoli

To Do: Thaw Meat

Friday
Breakfast: GF Pancakes, Eggs
Lunch: Peanut Butter Sandwiches, Apples
Dinner: Meatloaf, Garlic Bread, Green Salad

To Do: Bake Bread, Soak Chickpeas

Saturday
Breakfast: Cream Cheese & Herb Omelets, Toast
Lunch: Hummus & Tortillas, Fruit
Dinner: Crockpot Chicken & Veggies, Brown Rice

To Do: Prepare Roast

Sunday
Breakfast: Homemade Breakfast Sausage, Toast, Fruit
Lunch: Peanut Butter Popcorn, Raw Veggies
Dinner: Ham (nitrite-free) & Cheese Strata, Green Salad

  • That all sounds good! I like the “To Do” part of your list; I make notes like that on my menu plans, too.

    The apple oven pancake sounds delicious! Do you have a good recipe for Spanish rice? I’ve never found a good one, so I usually end up adding salsa to plain rice. :)

    I can’t find the Apple Oven Pancakes recipe in my copy of Simply In Season. It looks like I have the same edition that you linked on Amazon.com… Maybe it isn’t listed in the index. What page is it on? Or do you have a different edition?

    I think it’s actually titled Vegetable Oven Pancake. Then near the bottom of the recipe, it gives an alternate option for a sweet fruit one, using apples. :)

    @Michele, Thanks! Yum, can’t wait to make it. Do you make any alterations for whole wheat flour (or other whole grain flour)? I usually just put whole wheat instead of the all purpose without otherwise altering the recipe. :)

    I do a gluten-free flour mixture, but I think I have done just whole wheat flour years ago, just fine. :)
