Menu Plan Monday 3.14-20

It’ll be a busy week for us, so I’m keeping things simple with one pot meals, soups, and even a healthy batch of Nachos! Are you fixing a special meal for St. Patrick’s Day? I’d love to hear!

Breakfast: Soaked Porridge (from Nourishing Traditions), Eggs
Lunch: Cheese Sandwiches, Oranges
Dinner: Tuscan Bean Soup (from The Everything Beans Book), Grain-Free Lemon Poppy Seed Muffins

To Do: Make Yogurt, Soak Pancake Batter, Prepare Corned Beef

Breakfast: GF Pancakes, Berry Smoothies
Lunch: Peanut Butter Sandwiches, Raw Veggies
Dinner: Tomato & Cheese Strata, leftover Lacto-Fermented Sauerkraut

To Do: Make Granola

Breakfast: Granola and Homemade Yogurt, Eggs
Lunch: Salmon Salad on Spinach, GF Bread, Apples
Dinner: Cheesy White Chicken Chili (from The Everything Beans Book), GF Cornbread, Raw Veggies

Breakfast: Green Egg Sandwiches (We’ve been reading Green Eggs & Ham, too.)
Lunch: Peanut Butter Sandwiches, Apples
Dinner: St. Patricks’ Colcannon (use homemade corned beef), Oranges

To Do: Soak Rice

Breakfast: Breakfast Burrito Casserole (Thanks, Amy!), Oranges
Lunch: Leftover Soup, Bread & Butter, Apples
Dinner: Nachos w/Cheese Sauce (from In the Kitchen: Real Food Basics), Mexican Rice from (The Everything Beans Book)

To Do: Thaw Fish

Breakfast: Orange Smoothies, Coconut Flour Bread (from Cooking with Coconut Flour)
Lunch: Cheese Sandwiches, Apples
Dinner: Fish Chowder (From Healthy Pregnancy Super Foods), Garlic Bread, Spinach Salad

To Do: Soak Beans

Breakfast: Cheese Omelets, Toast
Lunch: Peanut Butter Popcorn, Apples
Dinner: 7-Layer Tex-Mex Dip & Veggies (from The Everything Beans Book)
