Our family’s favorite Sunday afternoon treat is a bowl of Peanut Butter Popcorn that my Beloved makes for us. (He’s the popcorn expert in our house.)
Many of you have requested the recipe, after seeing it on my weekly meal plans, so here it is! (Measurements are approximate.)
Peanut Butter Popcorn
1/3 Cup Honey
scant 2/3 Cup natural Peanut Butter
3/4 to 1 teaspoon Vanilla Extract
1/2 teaspoon Cinnamon
2 quarts Popped CornHeat honey in a small saucepan over medium heat just until it starts bubbling. Add peanut butter, vanilla, and cinnamon. Stir vigorously over heat until well blended and smooth. Be careful; mixture is hot and will stick to skin! Immediately pour honey mixture over popcorn and stir to coat. Let cool slightly before serving (if you can resist).
We munch on a huge bowlful; you may want to increase this recipe.

Michele,
Now I might just have to do another one! We have one son with peanut allergies, but I always substitute other nut or seed butters so we will try it today!
Thanks for this recipe! Popcorn is such a huge favorite (for taste and budget reasons) at our home that I already have 4 posts on it!
Blessings…

Oh, that sounds fabulous! How do you pop your popcorn? Do you have an air popper or use a pan/bowl on the stove?

Super yummy! Just made it! Not, completely successfull…I didn’t have the rest of the ingredients ready once the honey started to bubble (me: cinnamon…omg! Where is my stinking cinnamon?!) so needless to say it when a little too much, but I poured the clumpiness on the popcorn and it’ still great!

@Cindi, Thanks, Cindi!
I know it wasn’t intentional. Now you know- all recipes are copywrited, unless the author specifically gives you permission.
There’s always something new to learn in this blogging stuff, huh?
I’m so glad you liked the recipe!

I made this this weekend and it was fabulous! My daughter is allergic to dairy, so it was great to have a recipe for popcorn that doesn’t include butter! I linked to you on my blog, http://www.simplejoycrafting.blogspot.com.
