But it was getting to the point where I would sigh a bit, and think about “forgetting” the beans for dinner (again).
Then I received a copy of Katie’s new ebook, The Everything Beans Book. Hooray!
We found some new favorites, including the 7-Layer Tex-Mex Appetizer Dip (I serve it with tortilla chips and raw veggies for a simple supper), Mexican Stuffed Peppers, and a selection of new chili recipes.
Many of the recipes are perfect for heating in the slow-cooker too, such as the Lentil-Rice Casserole; perfect for a Sunday dinner, a busy day, or just keeping the heat down in the kitchen through the summer.
Seriously, I cook from this book at least once or twice a week (which you’ve probably noticed, if you follow my weekly meal plans). It’s full of staples, that you can “tweak” as needed, depending on what’s in season or what you have on hand. She’s also included notations for adapting recipes to meet allergy needs.
