A healthy sweet treat at our home/business lately has been a chocolately dried fruit/nut snack. Grain-free, vegan, and without any added sugars (dates add the sweetness), they have been perfect for guests with special dietary needs/food allergies. They also make a good road trip snack for summer travelers.
I believe these are probably allowed on certain stages of the GAPS diet (if you are following this diet, double-check on that, though.)
I purchase the ingredients in bulk from a natural foods co-op, so they are actually an affordable snack (compared to similar packaged snacks)!
Healthy Fudge Balls
1/3 Cup Walnuts (preferably soaked & dehydrated for best health benefits)
1/8 Cup Dark Chocolate Cocoa
1/2 Cup Deglet Noor Dates (pitted)
about 1 tsp. + 1/2 Cup Shredded, Unsweetened Coconut
Enough Water to make it sticky
Grind up walnuts in a food processor until finely ground. Add cocoa, dates, and 1 tsp. shredded coconut to the food processor, and blend until well-mixed. Slowly add in a drizzle of water, while running the food processor, until everything sticks together (but is still sticky). Roll the dough into small balls (about 1″), and then roll each ball into the shredded coconut.
Makes about 6 fudge balls. Store in an air-tight container. Adapted from this “Bliss Balls” recipe.
