4 Best Post-Holiday Healthy Meal Ideas

Now that the flurry of holiday activities has subsided, we can start transitioning back into our regular routine. Part of making that transition a smooth one is sticking to some EASY healthy meals.

January is often a time of refocusing on healthier meals, after rich holiday foods. Stick to your diet by planning ahead for some meals full of veggies, nourishing broths, and filling whole grains!

Here are our 4 Favorites:

  • Slow Cookers

Never underestimate the power of a slow cooker; it’s a busy woman’s little helper!  Toss some fresh vegetables, broth, and beef (or other choice of meat) into a slow cooker, such as this Chicken Sweet Potato Curry. Set the dial, and over the next few hours your work will be done. Now you can read a book, play with the kids, clean the house, take a nap, or whatever else is on your list. The meal is taken care of.

    • Hearty Salads

    We don’t typically think of salads as meals, especially if our hubby believes no food is a meal without meat of sorts. :) However, if you incorporate meat into the salad, everyone is happy.

    Cook some chicken or ham (or use leftovers, such as turkey!), and put it into a gourmet salad of lettuce, tomatoes, cranberries or other fruit, pecans or walnuts, your favorite dressing, and… viola!

    If your family is fine with a vegetarian meal, chef salads with hard-boiled eggs, cooked chickpeas/garbanzo beans, and cheese are frugal, tasty, and full of protein even without the meat, such as when added to this Raspberry Orange & Spinach Salad.

    • Fajitas

    Fajitas are also an easy, quick, and healthy meal. For a simple preparation, heat a couple tablespoons of oil in a pan with a little chili powder seasoning (and perhaps a bit of lime juice, if desired). Cook thin strips of meat a few minutes until the pinkness is mostly gone. Add some diced onions and colorful bell peppers – green, red, and yellow – and cook for a few additional minutes until done. Serve on a tortilla with some shredded cheese. A side of brown rice and/or beans can round out the meal, if needed.

    • Home-cooked Meals from the Freezer

    Don’t forget to dig into the back of your freezer! Did you utilize those days you planned ahead for easy meals by putting extras in the freezer? Sometimes we have things tucked away in the freezer so long that we forget all the treasures we’ve been storing away. Pull out those jars of broth, bags of garden veggies, or other partial casseroles for a quick meal!
