Have you been looking for some simple ways to transition to healthier foods? Thankfully, Katie of Kitchen Stewardship has a new cookbook with delicious snacks & treats that help simplify the transition to healthier sugars/flours, without much fuss.
(I apologize in advance for those of you who are completely giving up sweets for Lent; I missed noting the early date of the season this year, when preparing this giveaway! But one of her “healthier” cakes/frosting would be a delightful addition to your Easter table later on!)
When I need a quick option for drop-in guests, a treat for a last-minute party, or rounding out a family meal, I’ve regularly turned to Smart Sweets these past few months. (In her signature style, many of the recipes are low on dishes to wash, too; often prepared completely in the blender or one bowl!)
This book is full of some of our long-time favorites, such as the Black Bean Brownies (with new-to-me options for various flavors; I’m taking these to a weekend baby shower!), the grain-free Baked Apples (similar to my recipe), Truffles (similar to my Christmas favorite), Peanut Butter Bars (similar to our flourless cookies), and the Better-For-You Chocolate Syrup (great on ice cream!).
My children especially love the Easy Brown Rice Pudding (“just like The Poky Little Puppy!”), and absolutely prefer Katie’s simple stovetop version over our old family recipe of the custard-style baked rice puddings. It has been a fun breakfast, as well as a dessert option.
A new favorite has been the Real Vanilla Pudding. Ah, such rejoicing in our kitchen when I finally mastered a simple pudding. Honestly, for some odd reason, over the past decade, I’ve never been able to successfully prepare a batch of from-scratch pudding. But thanks to Katie’s simple instructions, I finally got it “just right” on the first try! We’ve loved a new “tradition” in our home of a small dish of pudding as a Sunday afternoon treat.
The Magic Coconut Pie has been one of my go-to treats for guests, as it’s simple to prepare in minutes with the blender (and has a gluten-free option, when needed).
Still on my list to try soon are the Butternut Spice Bars (I think I could sneak these past my child who insists on not liking squash!), and the Cherry Almond Crepes (I always crave cherries during pregnancy!).
