Seasonal strawberries are perfect for melding sweet and savory foods, such as in a Cobb Salad, or with a bit of feta and almonds.
Strawberry Vinaigrette Dressing
1 Cup fresh Organic Strawberries, washed & hulled
1/3 Cup Balsamic Vinegar
2/3 Cup Olive Oil
2 tsp. Maple Syrup, Honey, or Raw Sugar
1/2 tsp dried Tarragon
1/2 tsp dried Parsley
1 tsp (or to taste) Real Salt
Sprinkle of freshly ground Black Pepper
Purée strawberries in a food processor or blender. Combine well with remaining ingredients and shake well. (Make sure sugar is dissolved.) Drizzle over salads and serve.
Optional salad addition: Slice up another cup of strawberries for a beautiful and sweet garnish on your salad! A bit of fresh basil is delicious, too, if you have it.
