I remember quite possibly the first time I tasted a cucumber. I lived in Missouri, and was in kindergarten, maybe it was before kindergarten. Marvin was my little buddy next door. His dad let Marvin and me sit in the wheelbarrow while we ate salted cucumber slices and he pushed us around the yard. Those are very fond memories.
I recently made a cucumber sandwich. I started adding this and that to it, and ended up with a very tasty summer snack. You can alter this recipe in countless ways to end up with your own concoction.
2 – 4 Slices of Bread
2 T. Cream Cheese
1/4 t. Olive Oil
Garlic Powder (to taste)
Pepper (to taste)
1/4 – 1/2 c . Mozzarella Cheese
Mix the cream cheese, olive oil, and garlic powder. (I like to use a lot of garlic powder.)
Spread cream cheese mixture over bread.
Layer the bread with cucumber slices.
Pepper to taste.
Sprinkle mozzarella cheese on top.
I did not use dill, but it’s another ingredient that can be used.
Cucumbers have so many possibilities for snacks. They’re great in sandwiches, pasta salads, veggie salads, pickled, or simply sliced and eaten with nothing else (best enjoyed in a wheelbarrow).
