Vegan & Grain-Free Cinnamon Raisin Valentine Cookies

My children were thrilled with a special treat that says “I love you,” both with its heart shape, and because it meets special dietary needs, just in time for Valentine’s Day!

These cookies are pretty soft-textured, so if you are traveling or putting them in a lunchbox, make sure to store them in a sealed container to keep the cookies from breaking.

Vegan & Grain-Free Cinnamon Raisin Valentine Cookies
2 Cups Blanched Almond Flour
1/4 tsp Baking Soda
1 tsp ground Cinnamon
1/4 tsp Salt
1/3 Cup melted Coconut Oil or Spectrum Shortening
1/4 Cup Honey (or vegan alternative)
1 Tbl. real Vanilla extract (gluten-free)
1 Tbl. Coconut Milk
1/2 Cup organic Raisins

Preheat oven to 350 degrees. Stir together almond flour, baking soda, cinnamon, and salt. Mix in oil, honey, vanilla, and milk. Fold in raisins.
Line a baking sheet with parchment paper.

Roll out balls of dough (about 1-2 Tablespoon size), and then shape into a heart with your fingers. Press the heart dough onto the baking sheet gently with the palm of your hand to flatten slightly. They will expand a bit while baking, so place them about a couple inches apart. (See photo.)

Bake 11 minutes. Let cool on the baking sheet for at least 5-10 minutes before removing. Makes 10-12 cookies.

    I had most of these ingredients on hand so I made them and they are very, very good! I didn’t have raisins, so I used chocolate chips instead. I also used regular almond flour instead of blanched. I made mine a bit smaller than pictured and they came out soft and chewy. I’ll be making these again! Thanks for sharing.
