One of our favorite side dishes for a summer meal or barbecue is a bowl of fruit salad.
It is nice and simple, with fruits that hold their texture (instead of getting mushy), and have a nice combination of flavors without adding any additional sweeteners or dressings. It also makes a light “dessert” at the end of a summery meal.
A large watermelon (usually around $6) typically lasts our family a week or two. I store it in the fridge, with one half cut into slices (in a large bowl), and the other half scooped into melon balls for quick salads or baby’s finger food. With the slices, I like to take a bowlful for an easy contribution to a potluck, or hand them to the kids and send them outside with their drippy- but refreshing- summer snack!
You can see in the above photo that my old melon baller has gotten lots of use over the past decade… it actually broke last night! Oops!
Summer Fruit Salad
1/2 Cantaloupe Melon
1/2 Honeydew Melon
1/2 lb. Strawberries
Using a melon baller, scoop out the melons, and add to a large bowl. (Pour any juices over the fruits in the bowl, if desired.) Slice up the strawberries, and stir to combine with the melons. Refrigerate for about 1 hour, to chill and allow flavors to meld. Serve.
Makes about 6-8 servings.
